Our team of chefs work with the best seasonal ingredients sourced from trusted local suppliers to produce truly memorable dishes. Our food culture and tradition are influenced by the land and the waters that surround us. We are fortunate to have some of the Island's best producers who share the same passion for quality and flavour as we do.

 

Timoleague Vegetables

Timoleague Vegetables supply a range of vegetables from their farm between Timoleague and Clonakilty in the heart of West Cork. Their quality product is freshly harvested and delivered to our kitchens weekly. They also supply Free Range Eggs from their flock of organically fed “happy hens” residing on the farm! 

 

Haven Shellfish

Haven Shellfish is a farm-to-fork business based in Oysterhaven, Co. Cork run by Jamie Dwyer. The Oysterhaven waters are shallow and pure, the perfect conditions for an Oyster farm!  This family-run business has been a trusted supplier of Oysters as well as other shellfish products for many years.

Horizon Farms 

Horizon Farms have been a valued supplier to The Blue Haven Hotel for many years. Owners Colum & Liz O'Regan are passionate about natural farming. The unique West Cork climate that we are exposed to here in Kinsale is driven by the Atlantic Ocean giving the product an intense and special flavour. 

 

Skeaganore Duck 

Eugene and Helena Hickey have run Skeaganore Duck since 1991. Their breed of duck is Pekin and has a distinctive salt marsh flavour due to the farm's proximity to Roaring Water Bay. Skeaghanore Duck has received a number of awards over the years including the Blas na hEireann Irish Food Awards.

 

Toons Bridge Dairy 

Toons Bridge Dairy is a family-run business, based in West Cork. They use raw, unpasteurised buffalo, cow and sheep milk to make over 12 varieties of cheese informed by the traditions of the Southern Mediterranean. They have our own herd of Italian Water Buffalo, that graze on their farms in West Cork, in the lush Toon Valley and on The Wild Atlantic Way. The cow's milk is sourced from a number of local dairy farmers. It is the milk that gives each cheese its distinctive flavour.

The Cottage Garden Kinsale

Founder Jason Linton started his business from his home cottage in Dunderrow, Kinsale in 2014. They supply the most delicious and fresh chemical-free produce. With a focus on sustainability, Jason ensures that his fruits and vegetables are plastic-free by using paper and compostable plastic alternative packaging to wrap anything that could be damaged en route. We love working with suppliers that value sustainable practices - this helps us on our daily journey to becoming a more sustainable tourism business. 

 

Food for Humans

Food for Humans is a small, chemical-free, fruit, vegetable and flower farm based in  Ballinhassig, Cork. They grow using chemical-free methods that build up the soil quality resulting in natural and flavourful produce. They supply local and seasonal ingredients all year round and live by the ethos of Local, Natural & Chemical Free!. We love the sound of that!

Rare

Chef Meeran Manzoor draws upon his wealth of global culinary expertise to create a menu that is both innovating and surprising, while maintaining the integrity of the produce.  He marries french cooking techniques with flavours from his hometown in Chennai, India using fresh, local ingredients.  He describes the menu as hyper-seasonal - his commitment to using only local ingredients at their peak of freshness pushes him to constantly update the menu.  No two visits to Rare will be the same!

Recommended in the Michelin Guide, Rare is an exciting culinary experience.
